recipe tips

Add a sprinkle of celery seeds for an extra burst of flavor. Or, use celery salt in place of regular salt.

Adjust the seasoning of salt and pepper before serving to make sure it's well-balanced after chilling in the refrigerator.

Use a mandoline slicer for thinly slicing the cabbage and kale for a more uniform texture.

Try different types of cabbage for variations in color and flavor. Green cabbage is the most common, but you can use red (purple), savoy, or napa for different flavors and textures.

To cut down on prep time, use pre-shredded cabbage or coleslaw mix from the grocery store.

common recipe questions

What makes Bob Evans cole slaw different from others?

Bob Evans cole slaw is known for its creamy dressing and the addition of finely shredded kale, which adds a unique texture and flavor to the dish.

Can I use a different type of kale in this recipe?

The most common kale is curly kale but you can also use lacinto kale which is a little more tender and sweeter, if desired. Just make sure to finely shred whichever you choose.

What can I substitute for mayonnaise if I don't have any?

Greek yogurt or sour cream can be used as a substitute for mayonnaise.

Is it necessary to refrigerate the cole slaw before serving?

Refrigerating the cole slaw for at least 3-4 hours or overnight allows the flavors to meld together and helps wilt the vegetables a bit.

How long can I store the cole slaw in the refrigerator?

It can be stored in the refrigerator for up to 3-4 days in an airtight container. Stir well before serving.

Can I make the dressing ahead of time?

You can prepare the dressing ahead of time and store it in the refrigerator. Just mix it well before adding it to the vegetables.

How can I adjust the flavor of the dressing?

You can adjust the amount of sugar or vinegar to balance the sweetness and tanginess of the dressing.

Can I add any additional mix-ins?

You can add mix-ins like diced apples, raisins, or nuts for added flavor and texture.

tools needed

Whisk: To combine the dressing ingredients in a large bowl. This tool is essential for making sure the dressing is well mixed and smooth.

Large Bowl: Needed to mix all of the dressing ingredients together, as well as to combine the cabbage, carrot, and kale with the dressing. Make sure the bowl is large enough to comfortably mix everything without making a mess.

Measuring Cups and Spoons: Used to accurately measure the mayonnaise, milk, sugar, vinegar, and Tabasco sauce.

Sharp Knife: To finely mince the cabbage, peel and shred the carrot, and finely shred the kale. A sharp knife will make these tasks much easier and quicker. Alternately, you can use a shredding blade in a food processor.

Cutting Board: Protect your countertops and provide a stable surface for cutting and shredding the vegetables used in this coleslaw recipe.

Cover: To tightly cover the bowl of coleslaw before refrigerating for 3-4 hours or overnight. This could be a lid for the bowl or plastic wrap. Keeping the coleslaw covered helps the flavors meld together and develop fully before serving.

what goes with it?

Ranch Parmesan Chicken: Pair this creamy and tangy cole slaw with juicy and savory ranch parmesan chicken for a delicious contrast of flavors and textures.

Pulled Pork Sandwiches: Top off your pulled pork sandwiches with a generous scoop of this Bob Evans cole slaw for a tangy and creamy twist on a classic favorite. The cool and crunchy slaw will balance out the rich and smoky flavor of the pulled pork.

Grilled Fish Tacos: Add a refreshing element to your grilled fish tacos by serving them with a side of this cole slaw. The crispness of the slaw will provide a nice contrast to the tender fish and add a bit of zing to each bite.

  3. SAM February 26, 2018

That isn't kale in their slaw. It's chopped green onion tops. No way it's kale, at least in my area.

I made this exactly as stated and used the tarragon vinegar as a reviewer recommended. It is close to Bob Evan's.....sort of. Bob Evan's is sweeter than this. I added more sugar and that improved it, but something is still missing. It is good, just not as good as Bob Evans. I love Bob Evan's cole slaw. Next time I go there, I'm just going to ask them what their secret is. : )

I worked as a manager for Bob Evans many years ago. They use tarragon vinegar in the coleslaw.

FAQs

Why does my homemade coleslaw go watery? ›

Cabbage contains lots of water. Alton Brown suggests salting the cabbage and letting the water drain for two hours, then rinsing the cabbage and spinning it dry before dressing it. That purges the excess water out of the cabbage before it is dressed, so it doesn't get watery.

What is the best pre made coleslaw? ›

With its nice, thick dressing, Walmart's deli coleslaw is the best creamy coleslaw of the bunch. The dressing is heavy on the mayo, which makes it the best coleslaw to slather on a burger or pulled pork sandwich, and the copious amounts of shredded carrot will contribute some crunch, too.

Why is KFC coleslaw so good? ›

Fresh ingredients are key to a good slaw, and KFC does alright for a fast food restaurant. You won't find any wilted cabbage pieces, and the carrots are nice and hard as well. What's more, KFC finely dices everything so you don't have to chew that much, and all the flavors and textures blend perfectly.

What is the difference Cole slaw and slaw? ›

The real difference is that the raw, chopped vegetables in coleslaw are primarily cabbage: Napa, red, savoy, or bok choy. Slaw without the cole can feature any crunchy veggie in place of cabbage, including chopped or shredded broccoli, carrots, snow peas, jicama, and more.

How do you get the water out of cabbage for coleslaw? ›

Place salted cabbage in a colander over a bowl for 1 to 2 hours. The salt pulls moisture out of the cabbage, seasons it, and leaves you with a super-crunchy texture that isn't raw or tough-tasting. Rinse! Rinse well to purge the salt.

Why do you soak shredded cabbage in water? ›

Keep it bright: Red cabbage retains that vivid purplish color when you slice it with a stainless steel knife (rather than carbon steel), use a nonreactive pan (rather than cast iron or aluminum), and add an acid, like vinegar or lemon juice. Crisp it up: Shredded cabbage stays perky if it's soaked in cold water.

Why did KFC stop selling coleslaw? ›

The fast food chain was forced to stop selling its coleslaw tubs when a supply issue meant the slaw would have to be served up without the dressing. “We are currently experiencing a supply issue with our KFC coleslaw dressing,” a KFC spokesperson said. The slaw is made up of cabbage and carrots coated in mayonnaise.

Why did Chick Fil A stop selling coleslaw? ›

"But as our sales volumes grew, it just wasn't feasible to keep adding to the menu without taking anything away." Chick-fil-A cut cole slaw from the menu in January to make room for a new "superfood" side of kale and broccolini in a maple vinaigrette dressing.

Why does my homemade coleslaw taste bitter? ›

Of course, slivering or dicing cabbage to make coleslaw also ruptures plant cell walls, so the same reaction is triggered. At first, any bitterness may seem pleasantly tangy as the salad's dressing mellows cabbage flavors. After a while, however, the released mustard oils definitely become more noticeable and pungent.

What is the most unhealthy thing from KFC? ›

Worst: Extra Crispy

Here's where "crispy" is a code word for "steer clear." The extra crispy recipe is by far the least healthful of KFC's chicken options. A single breast will set you back 530 calories, 35 grams of fat, and 6 grams of saturated fat.

Is coleslaw healthy or unhealthy Why? ›

Improves Gut Health

Coleslaw salad is rich in fiber because of the presence of raw cabbage. The RDA of fiber for an adult is 30g per day. It can become challenging to consume this much amount of fiber per day. However, 120 g portion of cabbage is sufficient to meet 10% of daily fiber needs.

Why is KFC recipe a secret? ›

The recipe is not patented, because patents are published in detail and come with an expiration date, whereas trade secrets can remain the intellectual property of their holders in perpetuity. KFC uses its Original Recipe as a means to differentiate its product from its competitors.

What do Americans call coleslaw? ›

Coleslaw (from the Dutch term koolsla meaning 'cabbage salad'), also known as cole slaw, or simply as slaw, is a side dish consisting primarily of finely shredded raw cabbage with a salad dressing or condiment, commonly either vinaigrette or mayonnaise. This dish originated in the Netherlands in the 18th century.

Which is healthier salad or coleslaw? ›

Classic coleslaw is full of shredded cabbage and carrots. The dressing, however, is made with mayonnaise and sugar. There is usually about ½ a cup of mayonnaise and usually a couple tablespoons of sugar. That adds up to more calories and more fat than you're probably looking for in a salad.

What ethnicity is Cole slaw? ›

The dish was initially created in the Netherlands. In fact, the term coleslaw originates from the Dutch expression koosla, which means “cabbage salad.” Recipes similar to coleslaw have been found and used in American homes from as early as 1770.

How do you thicken coleslaw sauce? ›

You can thicken coleslaw dressing by adding cornflour.

Does coleslaw get soggy overnight? ›

The longer it sits, either on a picnic table or in the refrigerator overnight, the more liquid is released from the shredded cabbage, which can make the salad soggy.

How long should coleslaw sit in the fridge? ›

Assuming that you're storing your coleslaw in the refrigerator — and haven't taken it out for a stretch of time and put it back in — coleslaw can safely last up to five days. However, it's important to remember that this is the maximum amount of time it should be kept.

How to fix too much mayo in coleslaw? ›

To offset the creaminess (and potentially wetness) of too much mayo, try adding in more of whatever crunchy element you were using. Celery and red onion are some of the most common ones, but you can also try chopped red peppers, bacon bits, carrots, cabbage, apples, chopped nuts, and more.
