Is there anything like rich and decadent amaretto around the holiday season?? This year, I put myself to work on creating a sugar-free amaretto.

You know, my favorite drink in all the world is an amaretto sour...

However, if you were to look up the nutrition facts on an amaretto sour you'd quickly find that it's FAR from a keto-friendly drink.

For this amaretto to be keto-friendly, it needed to be sugar-free and taste just like the real thing.

What About Non-Alcoholic Sugar Free Amaretto?

I'll talk about how to make a non-alcoholic sugar-free amaretto just below the recipe card... so keep reading.

Actually, I make it non-alcoholic most of the year and am starting to prefer it that way. Each to their own!

How To Make Sugar Free Amaretto

Before we get into the details...

For the best flavor, mix up this keto-friendly amaretto at least one week in advance. This allows the flavors to develop over time.

I also recommend using something other than bottom-shelf liquor. Use a mid-tier liquor or even a top-shelf if you plan on sipping this straight.

The Ingredients...

  • Water
  • Yacon Syrup
  • BochaSweet (or another sugar substitute)
  • Almond Extract
  • Vanilla Extract
  • Vodka

Now, there are a few ingredients here that you may not have lying around the house. Particularly the Yacon Syrup.

What is Yacon Syrup?

Yacon syrup tastes a lot like mild molasses. It comes from the roots of the yacon plant which grows natively in the Andes mountains of South America. It's actually been used for medicinal purposes for years for things like diabetes, digestive disorders, and improving kidney disorders.

For my purposes, I needed a low sugar alternative to molasses. Yacon Syrup fit the bill and works like a charm. Omitting it leaves an almond-flavored liquor that kind of falls flat in the taste department.

If you're in a real pinch, you can go ahead and use half the amount of molasses.

Otherwise, make sure you get some Yacon Syrup ordered, it's not easy to find on store shelves.

Ingredients

  • 1 cup warm water
  • 2 Tablespoons yacon syrup
  • ½ cup BochaSweet or other granulated sugar substitute
  • 2 Tablespoons almond extract
  • 2 teaspoons vanilla extract
  • 2 cups vodka

Instructions

  • In a mason jar or glass bowll, mix together warm water, yacon syrup and BochaSweet (or other granulated sugar substitute) until dissolved.

  • Add almond extract, vanilla extract and vodka and mix together.

  • Pour into a mason jar or other container for storage that you can tightly seal.

  • Store for a minimum of 1 week. This homemade sugar free amaretto reaches it’s best flavor if you make it about 4 weeks in advance.

To Make Non-Alcoholic Sugar Free Amaretto...

All you need to do to make this a Non-Alcoholic Sugar Free Amaretto is to replace the vodka with half the amount of water.

So, instead of 2 cups of vodka, you'll use 1 cup of water.

Simple, easy and delicious!

Then just use the Non-Alcoholic Sugar Free Amaretto in any recipe calling for the real thing.

What Keto Sweetener Substitutions Would Work?

What a great question! I'm asked this often.

If you haven't already tried BochaSweet, I highly recommend you do.

It's a superfood alternative sweetener made from a Japanese pumpkin called the Kabocha pumpkin.

Just about any alternative sweeteners will work in this recipe. You can useMonk Fruit Sweeteneror a blend likeSwerve.

What about Stevia?? Yes. Absolutely. Although, Stevia on its own doesn't quite taste like the real thing. I like to mix a little stevia with BochaSweet when I need things a little sweeter.

How To Make Keto Friendly Amaretto

Time needed:10 minutes.

Making keto-friendly amaretto is easy with a few instructions and the right ingredients. For the best flavor, age the sugar-free amaretto for at least a week. When I'm patient enough to let this sit a few weeks, I find it has the best flavor.

  1. Gather your ingredients.

    1 cup warm water
    2 Tablespoons Yacon Syrup
    ½ cup BochaSweet (or another sugar substitute)
    2 Tablespoons Almond Extract
    2 teaspoons Pure Vanilla Extract
    2 cups vodka (or 1 cup water for NA)

  2. In a mason jar or large glass measuring cup that's at least 32 ounces, mix together warm water, yacon syrup, and BochaSweet.

    Stir until the granulated sugar substitute (BochaSweet) is completely dissolved. About 1 minute.

  3. Add the almond extract, vanilla extract, and vodka or water into the mason jar and stir together until combined.
  4. Pour into a container for storage that you can tightly seal. Store for a minimum of 1 week in a dark, cool place.
