Overnight Einkorn Coffee Cake Recipe - Don't Waste the Crumbs (1)

When I was a kid, we would spend Christmas break at my grandparents in Chicago. Part of the tradition was coffee cake from a local Polish deli.

There aren’t many Polish deli’s in Texas you know.

Now as adults 25+ years later, my sister and I still talk about that coffee cake. This might sound strange, but that coffee cake (and the tradition and memories it represents) holds a special place in my heart. So much so, that I’ve never tried any other coffee cake.

Ever.

Until now with this Overnight Einkorn Coffee Cake recipe! I wanted to be able to enjoy a great homemade coffee cake at home year round, no matter where I lived!

And oh man, this recipe does not disappoint!

What is Einkorn Flour?

In short, it’s an ancient grain that is higher in protein, higher in vitamins and yet less starchy than modern wheat. It has never been hybridized, which means that it retains all the nutrients our bodies need to properly digest it (which makes it gentler on our tummies and in some cases, suitable for those who struggle with gluten).

I’ve experimented with a few einkorn recipes since adding it to our whole grain repertoire. Light and Fluffy Dinner Rolls and Naturally Sweetened Homemade Biscotti are both based on einkorn and are so, SO good, that they’ve made it to the official “Crumbs Must-Make Holiday Food” list.

And as I’m sure you know, it takes a lot to change holiday tradition!

Earlier this year I created and shared Homemade English Muffins, which are so much better than store-bought, you might end up making a massive batch and eating all of them fresh off the griddle with gobs of butter.

Not that I would know anything about that myself!

Not only is this recipe absolutely delicious, it’s also great because:

  • It’s made with whole grain
  • It’s not overly sweet
  • One pan can last for almost a whole week’s worth of breakfasts…
  • And it’s super easy to make!

Don’t let the steps fool you – it’s essentially mixing dry with wet a little bit at a time and letting it sit overnight. If you’re a beginner with einkorn – or with baking in general – this is a no-fail recipe for sure.

What is the best Einkorn flour?

I’ll admit – my experience with einkorn is based largely on trial and error. I read a little bit about einkorn from Jovial Foods to at least point me in the right direction, but since einkorn behaves differently than modern wheat, it forced me to get hands-on experience in the kitchen to truly understand how it worked in action.

Creating a recipe from scratch with einkorn is a big feat, and there were many days when I was testing batch after batch that I was wishing someone had written an einkorn cookbook so I didn’t have so many errors in my testing.

And wouldn’t you know, Jovial came out with one!

Einkorn: Recipes for Nature’s Original Wheat is seriously a must-have manual for anyone interested in baking with einkorn. There’s a whole section called Working with Einkorn that appeals my inner food geek because it explains both the practical “how” and the scientific “why” behind einkorn.

It sounds trivial, but understanding why you do what you do when you’re cooking and baking means making something that turns out good. It means more delicious food and less error in the trials.

And honestly, it makes you a better cook!

How do you make Einkorn coffee cake from scratch?

Make the Cake

  1. Sift together the flour, baking powder, baking soda and salt in a medium bowl.
  2. In the bowl of a standing mixer cream the butter for 2-3 minutes. Add the sugars and mix for 1-2 minutes, until the batter is fluffy and whipped. Add the eggs and vanilla and until just combined, scraping down the sides and bottom of the bowl.
  3. Fold half of the flour mixture into the egg mixture. Fold in 1/2 cup of the kefir, then repeat with the remaining flour mixture and kefir until everything is just combined.
  4. Cover the bowl with plastic wrap and store in the refrigerator all night, or up to 8 hours.
  5. When you are ready to bake, butter and flour a 9×13 baking dish. Remove the batter from the refrigerator and spread the batter into the prepared pan. Set aside.

Make the Crumb Topping

  1. Mix together the flour, granulated sugar and salt in a medium bowl. Cut the butter into the flour mixture with your fingers or a pastry blender until the butter is completely incorporated into the flour in small chunks.
  2. Sprinkle half of the mixture on top of the cake.
  3. In a small bowl, combine the cinnamon and cocoa powder and sprinkle evenly over the topping.
  4. Sprinkle the remaining topping over the cinnamon and cocoa. Bake for 42 minutes.
  5. Let the cake cool for 1 hour. Dust with powdered sugar and serve.

Note: You can also make the crumb topping the night before at the same time that you make the cake batter.

What is the difference between cake and coffee cake?

Both recipes are, of course, cake, but coffee cake is usually called ‘coffee cake’ because it is typically served at breakfast with a cup of coffee. Plus, this recipe has a cinnamon crumb topping, which most regular cakes do not have.

Why is kefir in this overnight einkorn coffee cake recipe?

Kefir can be used as a healthy substitute for milk or water in baked recipes. Since kefir is cultured, it gives a delicious tangy flavor and texture to coffee cake.

FAQs

Does einkorn flour need more water? ›

Einkorn may be substituted cup for cup with regular whole wheat flour in some muffin, pancake, cakes, and cookie recipes. However, sometimes the amount of liquid in the recipe needs to be reduced by roughly 15-20%. Einkorn absorbs liquids slower than modern wheat.

Why is my cake so dry and crumbly? ›

If you have too much flour in a recipe and not enough fat, like butter or oil, your cake is going to be dry and hard. For best results, I would encourage you to use a scale when baking, but if you don't have a scale, then just make sure you're using measuring cups correctly.

Why is my einkorn dough so sticky? ›

While einkorn is high in protein, its gluten properties aren't the same as modern wheat. This results in a dough that can be overly sticky and wet by the end of bulk fermentation.

What ingredient makes cake crumbly? ›

Other dry ingredients that can make your cake too crumbly include things like cocoa powder and sugar. Note: sugar is sometimes considered a wet ingredient, but for cakes we treat it as a dry ingredient). Cocoa powder absorbs a lot of moisture from your cake – even more than flour.

How to fix crumbled cake? ›

Use Frosting

Instead of serving the cake in broken pieces, put in some more time and prepare frosting in whatever flavour you like. Now, keep the cake pieces together and cover them in the frosting. The frosting will surely give your cake an enhanced taste and appearance, but don't overdo as it will ruin the taste!

Does einkorn flour need to be soaked? ›

SOAKING. While not necessary, we recommend soaking the einkorn wheat berries in the evening before going to bed. Place the grains in a bowl with twice the volume of water and let stand overnight. Therefore, for 1 cup of einkorn, you will need 2 cups of water.

Why does einkorn not work for baking as well as modern wheat? ›

Yeasted einkorn dough doesn't rise like modern wheat dough.

This is particularly true with einkorn bread. Don't expect big, fluffy dough during the initial rise. Yeasted einkorn dough does not double in size like modern wheat yeasted dough. This can also be expected when baking the dough.

What to know about baking with einkorn flour? ›

Einkorn's gluten is weaker than normal flour, so when you let a loaf of bread made with dry active yeast rise, don't let it proof to the old standard “let the dough rise until it has doubled in size.” If the dough rises too much, it will deflate in the oven.

How to keep a cake moist overnight? ›

Using an air-tight container is the best and easiest way to keep your cake from getting exposed to air. However, if you don't have one of those, you can wrap your cake in cling film, or if it's iced, place a large inverted bowl over it to trap the air.

Does sour cream make cake moist? ›

The addition of sour cream adds moisture, flavor, and tenderness to the cake. I use it in muffins and other cake recipes for the same reason, and it's the secret ingredient in homemade pie crust too!

How to make a dry coffee cake moist? ›

One way to do this is to brush the cake with a simple syrup made of equal parts sugar and water. Another way is to poke holes in the cake and pour a mixture of sweetened condensed milk and evaporated milk over it. You can also add a layer of frosting or whipped cream to the cake to add moisture.

Should you sift einkorn flour? ›

Sifting makes the einkorn flour much easier to mix into the other ingredients without lumps forming. This is especially important for einkorn flour because it is slower to absorb the liquids in the recipe than regular all-purpose flour and you can end up with dry flour clumps if not careful.

Can I replace all-purpose flour with einkorn flour? ›

Einkorn Flour absorbs less water and at a much slower pace than all purpose flour. Because of this, a great conversion rate in recipes is to use an extra 1/4 cup of einkorn for every 1 cup of all purpose.

Why soak einkorn flour? ›

It is claimed that soaking leads to easier digestion of grains, increased availability of nutrition, neutralisation of phytic acid and enzyme inhibitors, and increased amounts of desirable enzymes, minerals, and many vitamins.

How do you make cake mix less crumbly? ›

Add 2 extra egg yolks

Pros: Eggs yolks act as an emulsifier in baked goods, and adding two additional yolks (without the whites) both enhanced the perceptible richness of the cake layers, and produced a slightly tighter crumb, creating the overall impression of density, even if they weren't necessarily heavier.

Why is my cake mix crumbly? ›

To keep your cake from getting dry or crumbly, use all the eggs called for in the package directions and use large eggs, rather than small ones. If you're not sure what size eggs you have, measure them: 3 whole large eggs equals 2/3 cup; 3 egg whites equals 1/2 cup. Also, don't leave out the oil!

How do you make baking less crumbly? ›

Add more fat

If your cookie dough is too dry and crumbly, you can try adding more fat to it. This could mean adding more butter, shortening, or oil to the dough. If you're using a recipe that calls for melted butter, you could also try using cold butter and grating it into the dough.
